This is literally the EASIEST way to kick a craving in a healthy way. I mean if you think salt is from the devil then maybe I would stay away from the vegetable cube but man it has so much flavor!
I actually prefer less water with my noodles but I was trying something out. So if you want it soupy than add more water.
I bought these ingredients at my local co-op store, Natural Living. By the way, if you are in the Houston/league city area you should give that store a visit!
This recipe really is so simple. For this one, all I had was broccoli, zucchini, and carrots but I have made it before with mushrooms, celery, onion, and sweet potato. I would suggest adding at least one starchy element.
Sautee the vegetables or boil them in the same water you will boil your noodles in. I am all about super quick so I filled up a small cooking pot and chopped and boiled the vegetables.
Remove your vegetables and add the noodles. I followed the directions on the bag but its about 5-7 minutes.
Put your noodles in a bowl with your boiled vegetables and add the cubed vegetable broth. Add as much water as you’d like.
Then season to taste. Then voila you have healthy (salty) ramen made at home.
1 carrot chopped
1/2 cup chopped broccoli
1/2 zucchini chopped
1 “Not Beef Cubes”
1 block of rice ramen noodles
1tsp of trader joes seasoning salt (the broth already has tons of salt but this has other spices too)
1-2 tsp of garlic powder
Liquid coconut aminos or soy sauce
1/2 sweet potato
1/4 chopped onion
This is for a person portion so you can double or triple if you need too. The noodles come in a 4 pack.
