Grain bowl

I made this dish from a mistake and it turned out to be one of my favorite meals!


2 cup quinoa cooked in veggie broth/water

1/2 yellow onion

1 cup spinach

2 sweet potatoes

1 can black beans drained and rinsed

1/2 tsp cayenne pepper

1/2 tsp smoked paprika

1tsp salt

1/2 tsp pepper

1 tsp chili powder

3-4 tablespoons Tessemae’s lemon garlic dressing (or just squeeze one lemon)


  1. Heat your oven to 350 degrees. Cut the sweet potato into bite size pieces. Pour a tablespoon of oil on top, add your cayenne, smoked paprika, salt, and chili powder and chopped garlic. Mix together and add to a cookie sheet. Cook for 30 minutes
  2. While those are cooking start your quinoa. Cook according to package.
  3. Chop your spinach and onion
  4. once the sweet potato and quinoa are cooked, mix all together. Don’t cook the spinach, it wilts nicely from the heat of the others. You’re done!
