I made this dish from a mistake and it turned out to be one of my favorite meals!
2 cup quinoa cooked in veggie broth/water
1/2 yellow onion
1 cup spinach
2 sweet potatoes
1 can black beans drained and rinsed
1/2 tsp cayenne pepper
1/2 tsp smoked paprika
1/2 tsp pepper
1 tsp chili powder
3-4 tablespoons Tessemae’s lemon garlic dressing (or just squeeze one lemon)
- Heat your oven to 350 degrees. Cut the sweet potato into bite size pieces. Pour a tablespoon of oil on top, add your cayenne, smoked paprika, salt, and chili powder and chopped garlic. Mix together and add to a cookie sheet. Cook for 30 minutes
- While those are cooking start your quinoa. Cook according to package.
- Chop your spinach and onion
- once the sweet potato and quinoa are cooked, mix all together. Don’t cook the spinach, it wilts nicely from the heat of the others. You’re done!
