Dairy free mashed potatoes

I love mashed potatoes like my life depends on it. I don’t have them much anymore because they require A LOT of milk and butter to make them nice and smooth. But i found the solution! Veggie broth works wonders for the taste and smoothness I also found vegan butter that taste good and acts like real butter. These potatoes are good as a side or a topper for shepherds pie or oreos…. I don’t know your life. Read below for the best recipe!

Ingredients:

5-7 golden potatoes

4 tablespoons of vegan butter (its alot i know but its good)

2 cups of veggie broth

2 tsp salt

2 tsp garlic powder

Instructions:

  1. Wash your potatoes but don’t peel them, the skin gives a nice bite and it has special vitamins. If you absolutely hate the skin then fine you can peel them (: . Then chop them into fours, this allows for quicker boiling
  2. Add potatoes to a large pot of water and then bring to a boil, once your water boils you can lower the heat a little to medium low.
  3. Once boiled (takes about 5-10 minutes) mash the taters and add the salt, garlic powder, the vegan butter, and the veggie broth and keep mixing until you get the consistency you want. You could always add more butter or veggie broth.
  4. Enjoy! I topped mine with a little bit of paprika but you can definitely skip that.
