Copy Cat Trader Joes Vegan Pesto

I love pesto. It goes great on pizza, sandwiches, and its a great chip dip! This recipe is a little bit of a copy cat of the Trader Joes Vegan Pesto. I tried it and I was HOOKED. My recipe is made with macadamia nuts which gives it a nice twist. This pesto also has kale in it but don’t worry you cant taste it. So its a win win in my book, or is it win, win, win? I used basil fresh out of my garden and I am blown away, it tastes so good. Don’t worry though, you don’t have to have a garden to create this Pesto!


1/2 cup Basil

1 small bunch Kale or 1/2 cup of chopped kale

1 tsp Salt

4-5 tablespoons Safflower oil (if you only have olive oil just this amount of olive oil)

1/4 cup Olive oil

1 cup macadamia nuts

1/2 lemon juice (cut a half of a lemon and squeeze)

3 cloves of garlic


  1. Get a food processor or a blender with a low enough blade. I tried to use my Vitamix but the blade is too high for such a small amount.
  2. Gather your basil, kale, nuts, oils, salt, and blend everything up.
  3. Serve cold or warm Put it on hot bread, pizza, grilled cheese, and really anything you can think of.
  4. Enjoy!
