Grilled “cheese”

Ok, does anyone else ever just want a good sandwich? This blog is all about some good comfort food. Feed the soul and the tummy. This grilled cheese is super easy to make and the vegan cheese I found is amazing. It does have tofu which I don’t eat too often but its the best vegan cheese I have found so far. Except Hopdoddy has some amazing vegan cheese that I need to get my hands on. The pest is the last recipe posted so go check it out. Now if you want to buy a pre-made pesto and not use my incredible one I won’t hate (just a little) but I get it. Be aware that most pesto is made with Parmesan cheese and milk! So read below on how to make the easiest vegan grilled cheese with hidden veggies.

This vegan cheese is the best! I buy it from Krogers and HEB

Ingredients

(Each amount is for one sandwich)

2 slices of bread

Vegan cheese 2 slices

Pesto (my recipe or store bought)

3-4 slices of tomatoe

1 tsp vegan butter for pan

salt and pepper for taste

Instructions

  1. Heat up your pan to medium heat and put a teaspoon or two of vegan/ regular butter.
  2. I toast each side of my bread for added crunch. Then lay one slice of bread on the pan and both pieces of cheese on top of the slice, let cook while you assemble the other half.
  3. On the other slice of bread slather pesto on the inside and a few slices of tomatoes. Flip when ready (about 3-4 minutes).
  4. Enjoy!
